Baker’s Brew serves up custom cakes which are perfect for every occasion.
For some, the process of baking can have a positive impact on one’s mood and sense of well-being. Many find joy in in the act primarily because it is tactile, repetitive and elicits a sense of accomplishment and satisfaction. Sharing this joy of baking was the inspiration behind the brand, Baker’s Brew. Its founders harboured a desire to create the ultimate sanctuary for cake lovers and baking enthusiasts, and they opened a small baking studio in 2015 located in a shophouse with just four employees. Encouraged by the support from their customers and the popularity of their bakes, Baker’s Brew soon expanded into a retail bakery with outlets now located across the island.
Driven by a mission to be a part of every household celebration, Baker’s Brew specialises in creating bespoke cakes which are perfect for every occasion. Besides custom bakes, a delectable array of handcrafted artisanal cakes is sold at their bakeries which offer a feast for the senses, from local favourites like ondeh-ondeh, durian and lychee mango, to more classical fare such as cheese and chocolate cakes, pastries, and bread loaves. Their team of bakers also produces new creations every three months, offering fresh dessert-choices such as the stuffed donut, which is exclusively available at its Causeway Point outlet.
We spoke to Retail Manager Nyx Beh, who shared with us the inspiration behind the brand’s bakes.
Tell us about the concept behind your outlet at Causeway Point.
We have an extended kiosk model at Causeway Point, and this allows us to showcase a larger array of cakes and choices. This is the only outlet where you can find our stuffed donuts which are extremely popular and are freshly made every day. We have a variety of flavours like Chocolate Lava, French Vanilla Custard, and Strawberry Rose Cream. Our dedicated team of bakers have also come up with savoury options such as Truffle Cheese and Garlic Butter flavours.

Baker’s Brew comes out with unique flavours for their cakes such as yuzu, coriander and even watermelon. Where does the inspiration behind these flavours come from?
We have a very open culture here at Baker’s Brew and we encourage our staff to get creative and share their ideas. When an idea catches on, we would channel resources to researching and developing the flavour. We are always trying to make subtle adjustments to improve our cakes to provide something more special.
For example, many customers are surprised to learn that our best-selling Earl Grey Lavender Cake is filled with a liquid Earl Grey cheese centre. We have found that this provides the right amount of acidity to cut through the floral notes, creating a well-rounded flavour experience.
What are some of your other best-sellers?
I would say that our Hokkaido Strawberry Shortcake and Ondeh-Ondeh cakes are our top favourites currently. Our Strawberry Shortcake differs from the usual profile you tend to get elsewhere, which is sometimes too sweet. Ours has a balanced sour note from fresh berries, along with a creamy sweetness that gives a multi-layered depth of flavour when eaten in combination.
The Hokkaido Strawberry Shortcake is an all-time favourite with layers of vanilla milk sponge and fresh cream filled with strawberry chutney.
Our Ondeh-Ondeh is an all-time favourite and has been on our shelves since our early days. We use top-quality ingredients, processed from scratch, which allows us to ensure we get genuine and punchy flavours in every bite.
How often do you introduce new items to the menu?
We introduce new products every quarter of the year. We recently launched our pastry line which features all the classics – perennial butter croissant, Pain au Chocolat, assorted Fresh Fruit Danishes and our local spin, the Kaya Escargot.
Baker’s Brew is also well-known for designing bespoke cakes for any occasion. What are some of the most memorable requests that have been made?
We were once asked to create a three-tier wedding cake which portrayed multicultural elements belonging to the couple. It was a rewarding challenge for our cake-artist team to weave together Hindi and Peranakan heritages in a beautiful, cohesive manner. In the end, they used a lot of filigree-style embellishments, added in real florals, and created an edible replica of saree cloth using buttercream.

The amount of heart, effort and artistry that goes into our designs is what draws people to us. Our Customised Cake gallery on our website portrays examples of how elaborate and creative some of our cake designs can be.
Apart from the retail bakeries and the baking studios, what other services does Baker’s Brew offer?
We organise events such as birthday parties, baby showers, corporate team-building sessions as well as workshops. Our motto is Learn, Savour and Celebrate, and we would like our customers to experience us through unique baking classes, indulging in our bakes, and celebrating with our bespoke offerings.
One of the most memorable events we did recently was a combined effort between Baker’s Brew Café and our Baker’s Brew Junior studio. The birthday girl invited her friends to an interactive and personalised baking class, after which they adjourned to a reserved section of the café where they carried on the celebrations with a rewarding birthday feast.
